The Sea-Fisheries Protection Authority (SFPA) has published a notice on the correct use of food additives onboard approved freezer and factory vessels handling crustaceans, including Dublin Bay prawns.
The guidance outlines the requirements for the authorised use of additives to control melanosis (blackspot) and reminds food business operators that additives must be used strictly in line with EU conditions of use and manufacturer instructions.
Additives may only be used for their intended technological purpose and must not be used to disguise spoilage or extend shelf-life beyond safe limits, the SFPA says.
Food business operators are responsible for ensuring additive use is controlled through their food safety management system, with appropriate staff training, procedures and records in place, it says.
The SFPA says it encourages relevant operators to review the food safety information notice ( FSIN) to ensure continued compliance with food safety legislation.
